Candied Lemon Peel

I use an awful lot of lemons every week in making my semi-commercial quantities of ginger beer at the moment, and went looking for things to do with the leftover lemon peel. A lot of browsing candied lemon peel recipes later, someone made a passing reference to doing them in the crockpot.

Can anyone tell me how? And other ideas to use up the lemons would be welcome too :)

If you have a lot of lemon peel left, why not try to make limoncello? Not crock pot, and not non-alcoholic, but very, very tasty.

I'm of no help, but can you share the ginger beer recipe?

I use something based on this one: http://www.recipezaar.com/Ginger-Beer-10004. I've spent the better part of a year adjusting it so that it works but isnt syrupy sweet. And my husband, when given the choice between the ginger beer and coca cola on a hot day went for the ginger beer - he says its more thirst quenching than Coke.

Now I'm making 200litres for a Faire in January and just about sick of the sight of the stuff :)

You can always throw some in your disposal to sharpen the blades and freshen your drain. :)

I'm probably no help (I always just grate lemon peel and freeze it for perking up recipes I don't feel up to pulling out fresh lemons for, especially muffins), but commenting to say I'm very jealous of your surplus. Also: ginger beer!
