Roasted Red Potatoes

I love oven roasted red potatoes, but it is way too hot to use the oven, so I decided to try to make them in my crock pot.

I had about 3 lbs left from a 5 lb bag of medium to large red potatoes. I quartered the medium ones and cut the larger ones into pieces about the same size as the quarters. I sprayed the inside of my crock pot with Pam, tossed in the potato pieces, a few glugs of olive oil, and 2 tablespoons of homemade Italian salad dressing mix (recipe below). Stirred it all up and cooked on high for 6 hours. At about the 4 hour mark I was frying bacon for my son and tossed about 1/2 cup of fried bacon pieces into the pot.

These were so good, I may not go back to the oven when the weather gets cold.

Italian Salad Dressing Mix
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon white sugar
2 tablespoons dried oregano
1 teaspoon ground black pepper
1/4 teaspoon dried thyme
1 teaspoon dried basil
1 tablespoon dried parsley
2 tablespoon salt

In a small bowl, mix everything together. Store mix in a tightly sealed container.

Whisk together 1/4 cup white vinegar, 2/3 cup EVOO, 2 tablespoons water and 2 tablespoons of the dry mix.

Bless you for the Italian salad dressing recipe as well as the roasted potatoes recipe--I dearly love them both!

I love oven roasted potatoes, but they often call for roasting temperatures that quarrel with the main dish that wants to be in the oven. Problem solved!

If you added some chopped hard boiled eggs, dill, mayo, and Dijon mustard they would make a great warm potato salad.

What a great idea! I love roasted potatoes and it's excellent to know that they can be done in the crock pot if it's not convenient to use the oven.

That sounds like such a delicious way to roast any veggies.

I might try adding a few things, like onions and carrots, perhaps?

I now roast in the crock pot. I just oil it and put a couple of sliced onions on the bottom, and put my roast on top of that. Season well, add lots of garlic, put the lid on when it's on low, and leave it. The onions are all golden brown and caramelized when I get back. It's so yummy! I'd been thinking of just putting onions in there with some oil and seeing what happens, and now I think I've got to try that. Maybe make french onion soup from the results? Yummy!
