I'm not a big fan of oatmeal, but I could eat this every day - especially with how versatile it is :D
Multigrain Breakfast Pudding
3/4 cup steel cut oats
1/4 cup barley
1/4 cup cornmeal
1 tbs flax seeds
2 tbs brown sugar
1 tbs butter
1/2 tsp cinnamon
3 cups water
1 In a greased cockpot, combine all ingredients
2 Cover & cook on low for 8 hours, or overnight. Serve warm
Servings: 4
I eat mine with brown sugar & milk.
I've also tried throwing in kasha, & wheat berries in place of the barley. As long as the amounts are the same, you can basically use any grain (I'm going to be trying quinoa next)
