Slow-Cooker "Stir-Fry"

Slow-Cooker "Stir Fry"

6 carrots, cut into 1-inch pieces
2 med onions, cut into wedges
1 1/2 lbs beef round steak, bias cut into 1/2 inch strips
1 TBSP minced ginger (I use crystalized ginger in a pinch -- it keeps longer)
2 cloves minced garlic
1/2 cup water
2 TBSP soy sauce
1 envelope beef gravy mix
4 cups broccoli florets
3 cups hot cooked rice

In a 3 1/2 -4 quart slow cooker place first 5 ingredients. Stir together next 3 ingredients in a bowl, and dump over the others. Cover and cook on low-heat setting for 8-10 hours or on high heat setting for 4-5 hours.

If using low setting, turn heat to high setting. Stir in broccoli florets. Cover and cook for 15 minutes more, or until broccoli is crisp-tender. Serve over hot rice.

This really is a good, easy recipe. I adapted this recipe from one in the book, Better Homes and Gardens Biggest Book of Slow Cooker Recipes. This is a fabulous book if you use your slow-cooker a lot. My husband found it at a book sale at the school where he teaches, but you can probably find it anywhere.

It's pretty good! Throwing in the broccoli at the end makes it crunchy like stir-fry. Even my husband, the stir-fry-lover, gave this recipe a thumbs-up.

Do you think chicken gravy will work? I have to eat gluten free & I can't seem to find GF beef gravy.
